| Brian has been working in kitchens for the past 22 years. At 15, he became a line cook serving good ol' American cuisine. A few years later, he moved to Boston and worked at a number of high end establishments including The Boston Harbor Hotel, The Ritz and Harvest Restaurant. He also worked at the Harvard Bookstore Cafe under Frank McClelland, of the now much-heralded L'Espalier. A desire to branch out took Brian to California, where he had his first brush with brewpubs. This is where he developed a more refined dining experience suited and styled for great beer and great food. Coming back to Boston, Brian earned his bachelors degree at U Mass while working at Stephanie's on Newbury and at the Franklin Cafe. Just about two years ago, it all came together for him when he joined the Cambridge Brewing Company. |

Q What's your favorite recipe and why?
That's
a tough question. I'd say really lightly seared soft shell crabs in the
summertime. My favorite way to do them is in a little bit of olive oil
with a roasted red pepper coulis and a saffron aioli.
Q What's your favorite combination of junk food and junk TV?
Philly cheese steak and old episodes of Seinfeld.
Q Who would you like to invite to a dinner party (from history or today) and what would you serve?
Carl Sagan, the astronomer. And I'd probably just serve him a nice piece of fish.
Q What food do you hate?
There's no food that I hate, but there is food I wouldn't try. Like monkey brains. Or any kind of brain, actually.
Q What's your favorite kitchen tool or machine?
Definitely the blender. It makes my life a lot easier.
Q If you owned Milliway's, "the restaurant at the end of the universe" - what would you serve as the universe's last ever dish?
I'd have to say foie gras if it was going to be my last meal.
Q What's your favorite restaurant?
Khao
Sarn in Brookline. It's a Thai restaurant with great food and a really
nice atmosphere. It's not too pricey either. I really love their mango
fried rice.
Q Who is the best chef in the world other than you or your mum?
Joe
Kubik [Executive Chef at John Harvard's Brew House in Boston]. He
taught me a lot about everything I know, and he has a great work ethic.
Q What's your favorite cookbook?
I
don't have a favorite cookbook, I don't even own cookbooks to be honest
with you. I just really like going out to eat, and eating out really
becomes my cookbook.
Q What do you have in your refrigerator?
Right
now I have nearly nothing because I have just moved into my place!
There's beer, wheat germ, an iced coffee, and some leftover Mexican
food.
